Undhiyu

DescriptionUndhiyu is a dish made from various vegetables. It is prepared during winter in Gujarat. It is consumed with Indian bread Fulka roti.

  1. Prep. (00:03:00)
    Make a paste by grinding 10 curry leaves,green chilies,8 garlic cloves, 0.5 Teaspoon Sugar, 1/2 Onion, 1/2 Teaspoon salt,1/2 teaspoon red chili powder in a grinder.
  2. Prep. (00:02:00)
    To prepare gota, mix chopped Coriander,Fenugreek, Gram flour(besan), grounded peanuts and the prepared paste along with baking soda in a bowl to prepare dough. Due to paste you will not need water but if required you can add a it. Make sure dough is firm.
  3. Cook (00:07:00)
    Make small balls of about size of a marble from the dough and deep fry them on medium flame until they turn golden brown.

    Grind the remaining garlic cloves to make its paste.
  5. Cook (00:04:00)
    In a pressure cooker add 20 ml oil and heat it. Add cumin and mustard seeds along with asafoetida once the oil is heated. Once mustard starts crackling add curry leaves, onion and stir for a minute.

    Add tomatoes,garam masala,turmeric powder,salt,sugar,red chili powder, garlic paste,all vegetables and sprouted beans to the cooker and stir them well. Keep stirring while adding all these.
  7. Cook (00:05:00)
    Lastly add water and stir and then add fried gota (balls) into the cooker and do not stir but close the lid and pressure cook until two whistles on medium flame.

    Undhiyu is now ready. Take it into a serving bowl and garnish it with coriander.
