Paneer

Recipe: Paneer by

Description: Paneer is also known as cottage cheese or chenna. It is used as an ingredient in many sweets and north Indian cuisines.

Instructions:
  1. Cook (00:20:00)
    In a bowl heat the milk.
  2. Prep. (00:05:00)
    Once milk starts boiling turn off the stove. but keep stirring and after about 2 minutes start pouring lemon juice gradually while stirring the milk. The milk will start curdling after about 5 minutes. If not add bit more lemon juice.
  3. Prep. (00:03:00)
    On a straining vessel (with holes around and bottom) lay a muslin cloth and pour the curdled milk into it. Wrap the content entirely with the cloth and press it gently to remove the liquid from the curdled milk.
  4. Prep. (00:01:00)
    Keep it aside for couple of hours, if you want paneer to be harder cover it with a lid small in diameter than the vessel and keep some weight on it.
  5. Prep. (00:01:00)
    Unwrap the paneer from the cloth. Paneer is now ready to be used in recipes. You can cut it into required form like cubes, slice or strips or even use mashed or crumbled paneer.
