Adadiya

Description Adadiya, a traditional delicacy of the Kutch region in Gujarat, is topped with nuts and tinged with Indian spices. Adadiya is known to bring warmth and comfort. It has healing properties that the body requires during the cold winter months.

  1. Cook (00:02:00)
    Heat ghee (100 grams only) and milk into a pan on a medium flame and mix them well. Heat until it becomes lukewarm and do not heat longer.
  2. Prep. (00:02:00)
    In a bowl add Urad dal flour and pour half of the the lukewarm mixture of ghee and milk and mix them properly with hand.
  3. Cook (00:10:00)
    In a pan heat ghee (400 grams) on a low flame and add the mixture on flour and keep stirring. Heat until it becomes golden brown.
  4. Cook (00:02:00)
    Add gum into it while stirring continuously until gum mixes well.
  5. Prep. (00:03:00)
    Once gum is mixed well turn off the stove add the remaining mixture of ghee and milk along with copra and adadiya masala and mix it well until it becomes fluffy.
  6. Cook (00:07:00)
    In a different pan add sugar and water and heat it while stirring it continuously on low flame until it become thick. Later turn the stove off and allow it to cool for 2 minutes.
  7. Prep. (00:03:00)
    Now add the sugar syrup to the mixture along with cashew and mix it well. Once it is mixed well layer it on a greased surface (greased with ghee) uniformly about 15 cms thick and cut it into square pieces.
