    Wash carrot, peas and cauliflower and allow them to dry in sunlight for 5 hours.
  2. Prep. (00:02:00)
    In a bowl mix the sun dried carrot, peas and cauliflower along with salt, vinegar, lime juice, chili powder and keep it aside for 8 hours.
  3. Cook (00:05:00)
    In a cooking pan heat the oil and once heated add fenugreek seeds & mustard seeds both whole and split. Once seeds start crackling add asafoetida and then turn off the stove.
  4. Prep. (00:01:00)
    Once the oil with spices in pan gets bit cool add turmeric powder and allow it to cool completely.
  5. Prep. (00:01:00)
    Now add this oil into the mixture of carrot, peas and cauliflower and mix it well. Your pickle is now ready.
