Dosa

Description: Dosa is a south Indian dish made from a fermented batter of rice and black gram.

Ingredients:

Instructions:
  1. Prep. (06:00:00)
    In a bowl soak rice, urad dal and fenugreek seeds for 6 hours.
  2. Prep. (00:03:00)
    Drain the water and blend rice, urad dal and fenugreek seeds into a smooth and fluffy batter add water if required.
  3. Prep. (06:00:00)
    Cover the batter in a larger bowl and keep it in a warm place for about 6 hours (in winter it will take longer). After 6 hours the batter would rise as it will grow in size due to fermentation which is why we need a larger bowl.

    Add salt to the batter and mix it thoroughly.
  5. Cook (00:04:00)
    Heat griddle for about 2-3 minutes. Make sure the griddle is heated perfectly and then pour a ladleful of batter in the middle of the griddle and start spreading it in a circular form on the griddle. Add few drops of oil if the griddle is not non-stick.

    Once the bottom of the batter spread appears to be golden brown fold it to form a semicircle.

    Dosa is now ready to be served with copra chutney and sambar.
