Olo of brinjal

DescriptionOlo is a classic Kathiyawadi Gujarati Style Roasted Eggplant flavored with ginger and spices. It is mostly served with Indian bread made from millet.

  1. Cook (00:05:00)
    Make a couple of slits in brinjal till the middle along with the long side and roast them directly on the flame while keeping its side changing until it turns black.
  2. Prep. (00:02:00)
    Once the brinjal is roasted remove the burned black skin and chop it finely and remove the crown of brinjal.
  3. Cook (00:03:00)
    Heat the oil in a pan on medium flame.
  4. Cook (00:04:00)
    Add Coriander Cumin Powder, Mustard seeds, and Curry Leaves into the heating oil. After a minute add chopped onion and garlic and stir well.
  5. Cook (00:03:00)
    Add Garam masala, turmeric powder, salt, tomato pieces and stir for a minute. Add chopped brinjal, red chili powder and again stir well until it mixes properly.
  6. Prep. (00:01:00)
    Turn off the stove and place olo on a serving plate. Garnish it with coriander.
