DescriptionDrumstick, known as saijan ki phalli in Hindi, are pods of the plant moringa oleifera. This curry in Kathiawar is made with Gram flour (besan) most common ingredient of almost all Kathiwari cuisine.

  1. Cook (00:02:00)
    Wash the drumsticks and cut it into 2-inch pieces. Boil it in a pressure cooker with water till it whistles once.
  2. Prep. (00:01:00)
    Grind red chili powder, turmeric powder, garlic cloves, salt and 0.25 cup water to make curry paste.
  3. Cook (00:02:00)
    Put the oil to heat in a bowl and add mustard seeds, asafoetida, and curry paste into it. Stir it for 2 minutes and put it into a different bowl.

    In the bowl add buttermilk and besan (gram flour) and mix them well. Make sure there are no lumps. Add salt, sugar and turmeric powder and heat it on the full flame and keep stirring continuously.

    Add drumsticks into the bowl and again stir for a couple of minutes.
  6. Prep. (00:00:00)
    The curry is ready to be served. The curry can be seasoned with the curry paste as required.
