Sooji Gujiya

Description Also known as Gujiya, Karanji, Karjikai or Kajjkayalu. It is an Indian Sweet dish.

  1. Prep. (00:03:00)
    To prepare the dough mix oil, water and Maida flour and knead to form soft and smooth dough and set it aside for 15-20 minutes.
  2. Cook (00:07:00)
    Heat a pan and add ghee to it and roast Semolina/Sooji on slow flame till it changes color to light pink.

    Turn off the stove and add Copra, Cashew, Almonds, Golden Raisins, Cardamom and mix them well. Now allow the Semolina/Sooji to cool.

    Once the Semolina/Sooji is cooled down add Sugar to it and mix it will.

    Make equal sized balls.
  6. Prep. (00:02:00)
    Roll thin poori of a dough ball and add a spoonful of Semolina/Sooji stuffing in center taking care that Semolina/Sooji doesn't touch the ends of poori. Seal the poori with the stuffing forming a semicircle. You can use molds of your choice to do the same
  7. Cook (00:06:00)
    Deep fry them in hot oil on low flame till the color changes to light pink.

    Serve Gujiyas hot. It remains consumable for a week.
